Chocolate, Cheese and Beer

We’re excited about the Peculiar Pairings we have planned, and we’ve got some news for you about the tasting schedules. We’re also pleased to announce the not-for-profits you’ll be supporting when you attend our special Peculiar Pairing Unveiling. First up is Chocolate and Cheese, in honor of National Dairy Month. We’re working on some great confections that pair cheeses — ranging from locally made goat cheese to sharp English cheddar to creamy blue to caramelly gjetost  from Norway — with...

Chocolate Dipped Strawberries?

Well, no. If you get some fresh strawberries — and, I’m sorry, you’re not going to get fresh strawberries in February in St. Louis  — and dip them in chocolate, and then eat them right away, or in a few hours, that’s about as good as you can get. But if you go someplace and get chocolate-covered strawberries, that’s not what you get. You get a strawberry that’s been on a long plane ride, possibly from another country, that’s been dipped in...

Peculiar Pairings

We at Kakao really enjoy using unique ingredients in our chocolates and confections. Like our Pink Peppercorn truffle (with lemon and thyme), the  White Pepper and Sea Salt Chocolate Bark, or the Strawberry-Balsamic Vinegar truffle, to name a few. But really, we’re just getting started. We’ve got four months of new Kakao creations in the works, with June, July, August and September each dedicated to melding chocolate together with foods you don’t ordinarily consider when you think of candy and confections....

The Latest on Artificial Colors

It’s red all over. Specifically Red Dye 40 all over. It’s in jelly beans and cereal and fruit snacks. It’s in Altoids (those are white, aren’t they?), M&Ms, Jello and Lifesavers. It’s in an awful lot of Easter chocolate and other candies you can get at grocery stores. And it might be bad for you. In fact, in early 2008, European food safety watchdogs called for a ban on six specific artificial colors, including Red 40, based on studies that suggest the...

Easter at Kakao

The bunnies are back. Last year we had all of four molds to make these cute little critters, which we soon realized wasn’t enough. This year we have 12 molds at each store, which gives us a little more wiggle room. (Sorry!) (By the way, if anyone has given up chocolate or sweets for Lent, you might want to check out this recent chocolate-inspired sermon at The Gathering church in Maplewood.) So with all those molds, we thought we’d be able to...

Kakao Maplewood Grand Opening Celebration!

We know, we’ve been open for a couple of weeks now in Maplewood, but in the flurry of Valentine’s Day we didn’t get to have a Grand Opening Celebration — so we’re having one this Saturday! And boy, do we have some fun things planned… First, you’re going to Build Your Own Bark. We’re going to make small disks of chocolate that can then be decorated with an assortment of nuts, dried fruits, and other candies. After you decorate them we’ll...

Cross-Pollinating Two Chocolate Shops

Now that Kakao has two shops open, we have a split staff. Brian spends a lot of time shuffling between Kakao Maplewood and Kakao on Jefferson, but everyone else has a “home base” where they work. But even in these first couple of weeks with two stores, we found people were working on new things, finding better ways to do old things, and experimenting with new techniques and flavors. We want to keep things fresh all over, so we needed...

Kakao Maplewood to Open Thursday

No, not on Tuesday — we’re ready, but the weather isn’t. No use anyone risking life and limb for chocolate, with the Storm of the Century on its way to St. Louis. But yes, we’re going to open the Kakao Maplewood store on Thursday, February 3. Back in November when we signed the lease at 7272 Manchester (right around the corner from Schlafly Bottleworks, between Femme and Bouffant Daddy), we said we were going to open in early February, and...

Caramel Christmas Present

We at Kakao got a Christmas present early this year, in the form of an email from a customer. We were so tickled by it we wanted to share it with you. Naturally, after hearing so much about your wonderful all natural chocolates over the past few years, I had to see for myself.  I choose some caramels for Christmas gifts, only to later notice the 12/24/10 expiration date!  I needed no further prodding to open a package and enjoy...
